christmas festivities

I know it may be a little early but shut up I am excited!
I may not be 6 anymore but I love Christmas decorations and baking and Christmas music and eating. So I have actually started on decorating my room and have even pulled out a festive feeling jumper..
My bedroom will actually look like a grotto by the time it hits December but I'm that excited I feel I need to show you my progress!

My amazing cheese cake(s)

This is so simple but so yummy. You can make one big cake, or a few little ones like I did.

Base

250g of your favourite biscuits

100g butter
1 teaspoon of cinnamon (if you like, and I love)

Filling

500g of cream cheese

2/3 cup of caster sugar

4 eggs
1 teaspoon of vanilla essence (or, if you don't have enough cream cheese, just add your favourite flavour yogurt to the mix as it adds to flavour as well as acting as a substitute for cream cheese)

How to

Grease a cake tin, whatever size!

Crush biscuits until they're fine crumbs, add the cinnamon, and add to melted butter.

Press crumbs into the base of the cake tin.
Place into the fridge for 10-15 minutes.
Preheat the oven to 180 degrees.
Beat cream cheese until smooth, add sugar, vanilla (or yogurt), and eggs one at time, beating well after each egg.
Pour mix on to the base and bake for 20-30 minutes depending on how golden you want the top to look.

Et voila! One of three.
